Rome’s first and only 3-star Michelin restaurant, La Pergola, will offer two distinct dizzying culinary journeys, featuring an imaginative multi-course menu by world-renowned chef Heinz Beck, featuring dishes from the restaurant’s many The award-winning wine cellar – rumored to be the largest in Italy – holds over 75,000 bottles – designed by Master Sommelier Marco Reitano.

Alternatively, guests can indulge in a five-course Christmas Eve dinner with wine pairings at the hotel’s inspired Roman restaurant, Uliveto. The meal kicked off with a series of seafood dishes by Chef Fabio Boschero, followed by courses including pasta with red shrimp and pesto, sea bass with parsnip foam and mushrooms, and truffled veal shoulder with buttered spinach ( 110 euros per person). The festivities continue at Christmas, when Franciacorta will flow for the Sunday brunch in Uliveto’s famous garden hall, a favorite hangout of well-informed Romans. Highlights include a smorgasbord of sweet and savory delicacies, live music and activities for the little ones, including Santa himself appearing in his sleigh to deliver presents (€180 per adult, €80 per child).

La Pergola will host its grand party, an exquisite nine-course dinner paired with wine and champagne, featuring dishes such as scallops with pumpkin, almonds and caviar, and pigeon with beetroot, hazelnuts and black truffles. Accompaniment will include live music and spectacular fireworks (€1,450 per person).

Meanwhile, a five-course gala dinner at Uliveto – which also includes a buffet for both appetizer And desserts – dishes like champagne risotto with shrimp tartare and seaweed pearls, and roe deer slices with Jerusalem artichoke puree in a cereal crust will wow diners.At midnight, guests can try Italian traditional lentils and Kocino– Pork sausage – a symbol of health and good luck for the coming year (€390 per person).

For a lighter option, Tiepolo Lounge & Terrace will host a blue bubbles Celebration, including a bottle of Moët & Chandon Nectar Impérial and a selection of petit fours and hors d’oeuvres (€180 per person), with the option to add a selection of sushi (€70 per person).night with a New Year’s Eve with a view Party at the rooftop Terrazza Degli Aranci with a Moët & Chandon grand dessert buffet and fireworks (€190 per person). The festivities end on New Year’s Day with a traditional Italian Sunday brunch in the Garden Lobby and more activities and games for the kids (€155 per adult, €70 per child).

As a festive ritual of rejuvenation, the award-winning Cavalieri Grand Spa Club will present Festivity Glow, a unique experience in collaboration with new partner Natura Bissé. Designed to renew, hydrate and illuminate the skin, it includes a restorative face and neck treatment followed by a relaxing leg or body massage on Christmas Eve and Christmas Eve (€140/50min or €205/80min).

To kick off 2023 on a blissful note, the spa will offer partner La Prairie’s signature Caviar Lifting and Firming Facial on New Year’s Eve and New Year’s Eve.
